I think that’s because they get you to believe that if you admit to the crime, the punishment will be less severe. People who have given false confessions have later said that they were told that they would be found guilty either way and convicted, but a confession in advance would make things easier and they could get a greatly reduced sentence.

That and sometimes people are offered plea deals that will take the death penalty off the table (if it's a murder crime of a certain degree in a state that still has the death penalty).
