A Nice dish my uncle taught me R.I.P. Is
1 Diced Green Pepper
4 Cups of Rice
1 Large can of Black Beans or 2 small cans.
1/2 an onion or equivalent dried onion mix will work (use half the sachet)
1 packet of Mexican spices, could be taco or fajita or if you have it in your spice racks. Otherwise its like a buck for a pack of seasoning.
1/2 cup of malt vinegar/white vinegar (malt is better)
Step 1: start cooking the rice cook it well.
Step 2: place the black beans (drained) in an evenly distributed pot. Add 3/4 of water and a half cup of vinegar. I use a pyrex glass pot but any flat solid bottom pot will work.
Step 3: When the beans are boiling add in the onion, diced green pepper and pack of Mexican spice.
Step 4: lower heat to a gentle boil stirring occasionally till beans are tender (10-20 mins) then let sit till rice is done.
Step 5: When rice is done pour beaner mix on the rice stir well and serve.
