I love brie. You haven't lived until you have had brie en croûte.
Havarti, brie, feta, fresh mozzarella, gruyère, and gouda are my top picks. I only like bleu if it's crumbled and used in moderation. American cheese is primarily garbage, but the Cooper brand isn't too offensive.
Deep fried Brie in bread crumbs, with chilly chutney and salad is an amazing starter you get in restaurants and Pubs around here.
