I have to say I've become a big fan of Adam Rageusa. He's pretty much carrying the mantle of Alton Brown of being the Science Nerd cook. I like his personality in that he takes the memes about him in stride "Here's why I season the cutting board, not the meat."

Also I think it's cool how he'll concede that sometimes we're just better off using chemicals from a lab than trying to go fully natural. My "Macaroni & Cheese" recipes would always be giant dry ass failures until Adam just convinced me to accept using sodium citrate.

Joshua Weissman has some serious skill but I dislike his "I can make a better _________ than [INSERT HUGE CHAIN RESTAURANT], and so can you with a simple investment of several hours and $75 worth of ingredients" videos.

Like, no shit Josh. That's why people buy cheap fast food in the first place.

Beyond that, Kent Rollins and John Townsend are great for minimalist cooking ideas, since their channels revolve around historical cooking methods that predate modern kitchens.

I used to like cooking with dog, but ever since the dog died it was never the same. Maangchi was also okay, but most of the recipes started becoming repeats with just different meats or vegetables. So it's the same seasoning over and over again. Dianxi Xiaoge is another one I watch, but I'm pretty certain it's CCP funded propaganda. Flying culinary TV is ok, but I watch it more to help with understanding norsku.

You see, some of us don't know English properly.

Xiaoying Cuisine is fun because she turns absolutely anything into some form of bread. And the titles are always badly auto-translated by YouTube. "Teach you the lazy way, don't buy breakfast, the child rushes to eat! Smash teeth cucumber, most fragrant."

Li Ziqi is similar to Dianxi Xiaoge, and River Cottage is a similar setup but in England instead of China, it's farming and foraging and recipes.
I like food wishes but the inflection he puts on the end of every sentence is annoying AF.
I think he plays it up and it's become his trademark now. He didn't do it so strongly in his early videos.

April the Bread Bake Whore. That's what we used to call her on the redboards. On YT, it's CookWithApril. First one we saw was her making some sort of bread in a bread machine for her soyboy husband. Got to see them go down to Costa Rica, saw some cleavage in the swimming pool. Then she started splorting out kids. Before that happened, I would have cheerfully three-holed her.

No, I don't give a shit...

I'll have to look those up. What I'd really like is a similar style of these channels, but in the Nordic countries. Haven't seen one yet though.

Ethan Chlebowski, he does pretty simple recipes and doesn't come off as a reddit cunt like Ragusea.
Hot Thai Kitchen/Pailins Kitchen, does great videos explaining Thai food and giving recipes.
And of course Chef Jawn from foooood wishes dawt cawwwwwwm.
I like that Eathan also makes healthy recipes that taste good.

I'll start. Mine is Chef Wang Gang

Coronavirus jokes aside, check him out if you're looking for videos on authentic Chinese food (Sichuan specialties in particular) that aren't called Pu Pu platter or General Tso's chicken. Being able to speak or understand Chinese is a bonus.

-Egg fried rice
-Red-braised pork belly (one of my favorite meat cooking methods)
-Cumin lamb
You were not kidding when you said authentic Chinese food, that looks good.
I enjoy following Omar Allibhoy for authentic Spanish food as well as Vincenzo's Plate for Italian. I can attest to the Spanish Tortilla and the "authentic 5 hour Bolognese", as well as other dishes. Both are absolutely delicious and the Spanish Tortilla has become a near weekly thing I enjoy cooking for minimal cost (with portions adjusted).

Only one that I watch that I haven't seen mentioned so far is NOT ANOTHER COOKING SHOW. Pretty laid back presenter, nice Italian recipes in particular. Good videography and music choice which I know isn't going to save bad cooking but it makes it an enjoyable show to watch.

Imamu Room and Cooking with Dog have to be my faves. Bingeing with Babish isn't too bad, but Imamu Room making bento's for her husband is really cute tbh.

A Channel that hasn't been mentioned yet that I like is seonkyoung longest. She does a mix of all Asian foods. She's kinda insane though. At the beginning of one video she went on a 5 minute rant about how she's not pregnant. She does some weird editing sometimes, and I skip the ending where she eats with her weird husband and hapa kid.
