He'd get bored with Act Zero really quickly.So...Bomberman: Chapter Zero, yes/no for GK?
I'd also be kinda surprised if the Act Zero servers are still UP.

I'm only marginally acquainted with GK, so I can't guarantee this game will synergize with his psych profile, but I'm going to suggest "Ghost Master!"

Basically, it's a real time strategy game where you command a team of poltergeists, specters and spooks and stuff. It's from 2006, so it should run on Jay's computer... IIRC, it has some mild puzzle elements for the completionist, but shouldn't be too frustrating for someone on the first playthrough. BTW, its tone tends more towards juvenile than actually scary, so I doubt he'll chicken out, ala FN@F. (did he chicken out of that game, am I remembering that right? Like I said, I don't really follow GK)
But where I'm thinking this game could really hit the JAYckpot, is there's a number of levels where the primary objective is to terrify a sorority full of nubile, scantily clad (possibly barefooted, don't remember) young ladies with supernatural entities. Also, I don't recall if GK has authority-figure issues, but there's levels where you scare the crap out of police officers, doctors & nurses, priests.
And, it's only five bucks on Steam.
I'm not sure of how much he would understand of it but I Have No Mouth and I Must Scream might be interesting to watch him see how he reacts to darker moral themes. The section with Nimdok might also reveal a few more things about his views on Auschwitz; he already compares any of his minor discomforts with the Holocaust so it'd be interesting to see how he reacts when actually confronting realistic depictions of it.
If it's holocaust-like conditions you want, Asura's Wrath probably would be a good option since IIRC the main power source for the bad guys is basically harvested by their total disregard for collateral damage and the millions of humans who they harvest the souls of in the process. And the main plot point is rescuing Asura's daughter who totally has a Blossom-like hair ornament so there's incentive for him to keep playing (and we can only hope in such a case he actually gets enough S rank totals to unlock the true secret ending...where god himself shows up to kick Asura's - and in this situation, Jay's - pasty ass into nothing.)
The thing about games like Skyrim and Fallout is that he loads his games with mods. If that's okay with people, fair enough. As far as giving him something new and challenging him I don't think it would make for a fun watch. Then there's games like Skyrim and Fallout 3 and Fallout New Vegas but I can see that just turning into The Pissant Peasant going around killing animals that have the gall to exist on the same plane as him. Then again it would be funny to see him get his ass kicked by a dragon or deathclaw, assuming he doesn't cheat and turn on god mode.
I'm surprised nobody mentioned the God of War series.
Unless he doesn't have a PS2/PS3?

I mod my games too, once I've explored the base game enough. I don't think there's anything wrong with modding the game as long as he's only doing it to add more content and not just throwing in ridiculously over powered armour and weapons... what am I saying? Of course he will.
It's literally the only reason he likes mods. He likes being completely in control of a situation because in reality he has none.
I really want to see him play a game where he's forced into a situation where he has no control just to see his reaction. It would be good if he thinks he's in control and it slowly dawns him that he has none. Problem is that not many games do that.
Maybe we can get him to try Outlast then. That was kind of accomplished with Five Nights at Freddy's, because he kept ruminating over and over about if he had a gun or a weapon the animatronics would be toast. Sadly, it's a horror game, and the only reason he continued playing was because everyone in chat kept cheering him on and stopped him from pussying out.
