This is a thread for anything (foodwise) you thought was bullshit. Either a fad (like fusion in the 80s) or health (like gluten free)
I'm roasting cauliflower right now purely because it was in my fridge and it tastes like heaven (I'm using a vegan recipe tweaked.
same goes for casseroles (seemed oldschool) and gluten free pizza crust. I'm not celiac but holy shit, cauliflower crust (the reason it's in my house) is fucking delicious.
I'm way more willing to try stuff now because views change but taste doesnt.
anyone want to share? I'd love family recipes.

Normally I don't care about the gluten- free trend especially when it comes to desserts. It's hard to make a dessert gluten- free without it tasting like sadness and disappointment, but honestly the best peanut butter cookies I ever make were from a gluten- free recipe. The PB flavor came through really well and the texture wasn't weird.

The worst money-fleccing shit of the 21st century so far is "molecular gastronomy", because what would a posh meal be unless it starts with a cup of imbibable oxygen scented with lavender, and ends with a sorbet that tastes like pizza?

Tofu and coconut milk. At first I saw it as just yuppy/hipster crap, but after tasting it in a few recipes i've become enamored with the two of them.

Almond milk is far superior.

On topic, currywurst and doner kebabs. Was reluctant to try them when I went to Germany last summer, tried them both whilst in Germany earlier this year and loved them.

In the interest of contributing to the thread I've had some actually delicious fake meats. Not going to stop eating steak but I've gone out of my way to order vegan alternatives at specific restaurants because they were interesting food experiences all on their own. A vegan place in my last town does a disturbingly true to life tuna fish sandwich.

Sorry, I just saw this. I used the most common recipe, so I can't promise greatness.
I steam the cauliflower (a whole head quartered) then chuck it in the food processor. I pulse that bitch till its no longer recognized. Then throw about half into a square of paper towels, wrap it all in a tea towel and squeeze till all the liquids gone. Repeat with the other portion of cauliflower.
mix in a couple eggs, some parm, salt, basil and oregano. Make a crust like shape on a pizza stone. Cook until it's brown (20 mins), then top like a regular pizza.

The issues you might have had (cause i did them at first).
-not baking the crust long enough
-oven not hot enough (I think its in the region of upper 300s)
-too much sauce
-not getting rid of enough of the liquid in the cauli.

Using cauliflower to replace grains made me so dubious at first, but now I really enjoy cauliflower-rice. Much healthier than porking away an entire bowl of actual rice.

I wish I could buy it pre packaged.

Are you in the US? If so and you have a Trader Joe's near you, they have a frozen cauliflower rice. Green Giant makes it for regular grocery stores too.

I heard about this health kick of making ice cream using only bananas, it sounded weird enough that I figured I would give it a shot as they're dirt cheap here. Turns out that it actually works really well & I would highly recommend it.

Clean eating. It is all woo, mainly because everything is chemicals. The whole, "every meal is a struggle between good and evil" thing is horrendous.

And if I have to see that skinny bint Clean Eating Alice with her massive rictus grin beaming from a magazine cover wielding a plate of brown gack I'll burger myself to death.

Organic as well deserves death. Organic = bathed in shit and nibbled on by insects, also inefficient land use and low yields. Conventional / GMO = produces own pesticides, lasts longer, actually more nutritious, higher yields, less land use.
