You are conflating the mathematical ideal of infinity with the physics-oriented definition, which would be any asymptotic value (the energy curves on approaching the speed of light, absolute zero temperature, etc). If the universe inherited structure from a previous universe, then that structure *is* infinitely old with respect to us, because it existed outside of the time that is advancing in this universe, before this universe existed.
