They won't catch up and they most likely never will. It's not about Football (Soccer) over there, it's just another passionless entertainment show.
Football (Soccer) is not about just sitting there gulping down junk food, it's about passion and love for your club colors, it's about being a supporter to your colors, not being a fan/consumer/customer.
Supporters don't care about how comfortable the seats are or how many different foods and drinks they have at the terrace. Supporters only want to help the team as best as they can to win the game, because that's all that matters.
It's about being a supporter of your club for decades maybe even a century in your family. Football (Soccer) supporters are called the 12th man on the ground for a reason.

I'm a sports fan that's moved on from all team sports, and know plenty of people that feel similarly. The COVID situation breaking us out the habit of sports being there every single day was concerning enough that these leagues should have been especially welcoming, yet they chose to go full retard with the Virtue Signaling which will baffle me forever.

Some MLS fan bases have tried to adopt the European club supporter thing, like the Seattle Sounders. But they're infested with antifa and will purity spiral you right out of the group if you aren't one of them. That's the problem right there. Usually a fan club is offically acknowledged by the club, most if not all supporter groups/ultras aren't. I think you know the reasons for that.
