If you like Indian food, they have a ton of vegetarian dishes that are really filling. I eat meat but almost all of my favorite Indian dishes are vegetarian. I don't feel like I'm missing out on anything even though there's no meat.

I'll agree with the people who say Indian.

It's not really healthy, but Beyond Meat sausage is delicious.

I like a pot of pintos without added meat for flavoring. They're really good with fresh herbs and a side of cornbread.

Even just a lighter meal with hummus and sliced radishes for dipping.

Veggie pastas are crazy easy and tasty, especially veggie spagetti dishes. Veggie quiches are good too, and you can never go wrong with Asian stirfries.

A lot of Indian, Chinese, Japanese, Ethiopian and Caribbean food is vegetarian, basically anywhere that had a big population of vegetarians (Hindu brahmins, Jains, Buddhists, Rastafarians) will have a lot of good vegetarian cuisine. Same goes for places with multiple religions with different dietary laws (eg Lebanon, Indonesia) because it's easier to make something that everyone can eat than make separate kosher and halal options.

One of my staples is to make a quesadilla in the toaster-oven and spread refried black beans on it. That's the base and then you put whatever else you feel like on it. Diced Tomatoes, onions, toasted mushrooms, lettuce, taco sauce, avacado, Chili Cheese Fritos, whatever strikes your fancy.
I find it's very filling and pretty cheap.

That is the most important thing for me.
If it doesn't feel like you're only getting half a meal, then it's a succesful vegetarian dish.

My biggest gripe is that when I look up vegetarian stuff, a lot of it looks healthy and unsubstantial. There are so many blogs with food like that. Would it kill them to do a recipe with Sauce Mousseline, creamed carrots and potato pancakes?

Ditto to all the people who said Indian. If you don't like northern Indian (which is often vegetarian) try vegetarian southern Indian dishes.

Mexican or any Latin American dishes (okay fine, maybe not Argentinian) are awesome with beans instead of meat.

Any vegetable is vastly improved with hollandaise. It's not just for topping poached eggs anymore! (Although I agree that's the best application.)

How do you feel about eastern European dishes? There are some pretty tasty noodle/cabbage/cheese dishes out there. Like this one!

Edit: Mousseline? Make it, poach an egg, and serve it over stamppot.

Edit 2: Veggie lasagna is nice! Gnocchi with a hearty marinara and ciliegine. Bucatini all'amatriciana. Cacio e pepe. Penne all’arrabbiata. Hell, make a carbonara without bacon (or use bacon bits if you're feeling truly sacrilegious).

Honestly any noodle or pasta dish is hearty, non-awful, and filling. And can be made unhealthy and meat-free with a few quick substitutions.
