Palak paneer FTW, especially if you make the paneer yourself (it’s honestly so much better). Also potato and egg casserole with sour cream - I think it’s sometimes called Polish Lenten potatoes or similar. Non-vegetarians even like it.

Omelettes; fried rice that includes egg and salted cashews; spinach and leek quiche; nachos with refried beans instead of mince....

If you include eggs or dairy or both, and avoid “meat substitutes” and tofu, you can generally make a decent meal.

Vegetarian is easy to do, but not always a healthier alternative. Depends on how much cream/butter/eggs/cheese you add to it.
  • Quiche is one of my favorites. I do a broccoli and cheddar one that is good, but you can take a basic quiche recipe and switch out ingredients/spices with ease. The only caveat is to make sure that anything with a high moisture content (like broccoli) is partially cooked first and drained really well or it will throw off the consistency.
  • Stuffed grape leaves are easy to make vegetarian. You can substitute lentils for the beef.
  • Vegetarian chili. You don't have to use soy crumbles to replace the meat. Just use kidney beans to replace it.
  • Asian stir fry is also great for vegetarians. If you get extra firm tofu and drain it really well (wrap in paper towel and put a book on top and weigh it down with a can, and let it sit for an hour or two to really get the moisture out), you can cut it in cubes and pan fry it. In addition to protein, it does give a "meaty" texture (but not flavor -- tofu has no flavor) to dishes. It is the only way tofu is edible to me.
  • Soups. Plenty of options. You can even do a vegetarian version of french onion soup if you use mushroom stock instead of beef. It's really good.

Roasted potatoes with garlic and parm, eggplant Parmesan, garlic and olive oil pasta, fettuccine alfredo and penne alla vodka (pork free vodka sauce) are all awesome dishes. I’m a life long vegetarian.

but if you want vegetable based dishes and something a little more nutritious, look a vegetarian poke bowls l avocado toast, baked potatoes, stuff like that.

Traditional pre-Columbian Mesoamerican/Native American agricultural practices centered heavily around the Three Sisters--corn, climbing beans, and winter squash. This is especially true across the south and southwest. We have a lot of vegetarian and vegan recipes that are centered around these three ingredients. Often these are stews or soups. You can find a lot of good Three Sisters inspired recipes online.

For a while, I really disliked veggie burgers as the ones I tried were really dry and tasted weird. Since then, I found some decent ones offered at local markets, and have also come across a few recipes for them. Haven’t made the latter myself yet, though I think the burgers make for a nice change of pace if you want to do veggies or beans over meat once in a while.
As somebody previously mentioned, there’s existing options like Beyond Meat, Impossible, and Morningstar Farms, though I can say they’re definitely not for everyone.

Well, here people fast around Easter so, lots of Greek dishes are vegetarian, like green beans (φασολάκια), stuffed vegetables (γεμιστά), fasolada (bean soup), lentil soup, halva, mpriam (μπριάμ) which is potatos and zucchini with tomato sauce and herbs in the oven etc

I love to eat Som Tam (Papaya salad) and Pak Boong (Morning glory) with rice. I also love vegetarian mapo tofu (just normal without the mince). Basically anything with chilli and garlic is the best in my books. I remember eating an indian dish and it was just carrot, brocolli, etc just fucking covered in butter and garlic and it was amazing.

I think my problem with vegetarians is they always either are completely picky and only eat shit like bread and cheese or they eat unflavoured mixed vegetable garbage. There are so many good ways to cook vegetables (especially sweet potato and pumpkin) without having to be masochistic about your dietary habits.

Those morningstar veggie burgers were pretty good like 13 years ago.
I had a friend who was into them.
Haven't tried them lately, though.
