Indian is pretty good. Dahl curry and paratha is pretty good. Veg risotto is also pretty good and not too hard to make.

Seconding Dahl. My mother makes lentil Dahl and it is absolutely delicious and I always have to fight the urge to stuff myself with it. Not a great idea though, the spices are quite strong and can upset your stomach if you shovel it in by the gallon.

The trick to vegetarian dishes is to look for recipes that aren't half-assed versions of meat dishes with the meat replaced. So essentially, good recipes that just so happen to be vegetarian.

Ratatouille is a favorite of mine because it comes together really easily (I just use canned pasta sauce cuz I'm lazy), it's pretty much just sliced eggplant and yellow squash in tomato sauce, optionally topped with cheese.

While I prefer my Japanese curry with meat, you can easily take the meat out and just have a full veggie curry as well.

I used to have a great recipe for a (vegan) dry potato and cauliflower curry, and I keep searching online for it with no luck. Anyone able to help? Has to be free of coconuts.

Is it aloo gobi? Something like this? One of my favourite dishes for sure.

One of my favourite go-to meals when I’m cooking for non vegetarians is vegetarian/vegan chilli and cornbread. It is a really hearty and satisfying meal where you don’t miss the meat at all, just load it up with beans and/or lentils and it’s super delicious and economical as well.

If you've got western tastes that don't exactly venture into the "zesty and exotic" sorts, don't underestimate pasta, pizza, eggs, potatoes and beans as major workhorses. Pasta as an entire food category can easily become your best supporting post, especially when you change up the sauces and pay attention to fillings for tortellini and ravioli.

Non-veggies getting vegetarian suggestions from actual vegetarians may sound like a great idea, but it really hasn't been so in my experiences with multiple veggies. A vegetarian, especially a long-term one, will suggest things that they are accustomed to eating, which most omnivores in the west will find difficult to enjoy if not fully repulsive. If you know any omnivores who have had to make adjustments in order to accommodate veggies on a regular basis without making separate dishes for everyone's meals, they're who you need to talk to, especially if you're on the road to becoming one of those said accommodating omnivores. If you're here asking for help because you're in a romantic relationship with a veggie, then god help you. Either you go veggie, they go omnivore or you both turn mealtime into an increasing conflict until someone either leaves or you just give up on all enjoyment of food and resent the other for it. Opposites do not attract in terms of diets. Of course, this is all just based on my own experiences and observations.

Does any one have some good vegetable soup recipes which don't devolve into adding tomato and cheese to everything? I'm trying to find some good veggie noodle soups instead of just pasta sauce you eat without the pasta.

I don't know how any of you haven't mentioned a vegetable stew yet. Fry your vegetables first (onions, carrots, mushrooms, swede and potatoes are the core of any good stew) then boil them for half an hour to an hour. Add in some vegetable suet dumplings and it will thicken up and be delicious. You can use some good fake sausages to beef it up if you still fancy some meaty bites.

Roast onions are easy to make and taste delicious. They're sweet like candy if you remove the burnt outer layers. Don't roast them with your other veggies or you will turn them bitter. Roast potatoes, sweet potato and carrot in a pan together instead. Once everything is cooked add boiling water to that pan and scrape the bottom over a stove to make a thick delicious gravy.

Baked apples. Cut most the core out of an apple, add in butter and cinnamon and bake until soft. Doesn't matter if you're a veggie, it's simple and good home cooking.

Many veggies don't know how to cook, they know how to use spices and herbs which is a different thing. If you buy crappy mass produced products you need to cover them in other flavors to mask that. If you have good, fresh vegetables you can make really simple recipes like above and get great meals out of them. Everyone loves roast potatoes for a reason and as a veggie you need to find those core vegetables you enjoy roasting and use those as your foundations.

I mentioned both pumpkin soup and both the red and green borscht. However, potato soup is also good. Leeks, potatoes, dumplings made from flour/eggs, and cooked in a milk/cream base soup is good. One could make french onion soup without the beef consume(can't spell the name of it) and possibly leave out the cheese.
 
The only explicitly vegetarian meal I make from scratch is potato rosti pretty nice with just a poached or fried egg.

Most of the time when I'm eating vegetarian it's because I cant be bothered to cook and just pick up some cheap frozen premade shit, things like bean burgers, falafel or cheese and onion pasties. Often just as nice if not nicer than meat based equivalents of the same price. When you consider the meat in cheap premade crap is connective tissue, buttholes and snouts it makes more sense to eat vegetarian.

Gazpacho is the shit, trust me. You just need a kilo of tomatoes, garlic, water, a cucumber, wine vinegar, paprika and you have one of the best cold soup ever made. Also try Pantumaca, smashed tomatoes with garlic, it's great on toasts.
And potato omelette with onion and fried green peppers served alongside the omelette.

Oh I hear you. One of my kids dated a vegan for a while and every time he came over for dinner it was miserable. I’d usually make sure to have vegan and non-vegan options to eat but this brat was so entitled that he thought everyone should be vegan for the occasion just to accommodate him. We all got free lectures about “meat is murder” etc, always greeted by an awkward silence. I’m fine with accommodating people but that was just stupid. I had such a great feeling when he got kicked to the curb.

Thank you @Farm Boy, it was pretty much this but without the tomatoes. It was always one of my vegan go-to recipes, so I need to tweak it again. Just loved the combination of dry spicy potato with rice somehow. I used to sometimes add chickpeas as well (yes I know, but you compromise when feeding a large family).

Lifelong vegetarian. Find a few vegetables you really like, and use them in place of meat in your dishes. This makes ordinary dinners possible. Spaghetti? Grated portabella in the sauce is awesome. Steamed broccoli can be too, it depends on your palate, you'll want to fuck around a lot like a scientist. There are so many mushrooms out there, a wide variety of textures and flavors. Cauliflower steaks, mushroom burgers, almonds, cashews, legumes.

Figure out what you like and add it to the meals you are accustomed to enjoying.
