Non-awful vegetarian dishes? -

Lifelong vegetarian. Find a few vegetables you really like, and use them in place of meat in your dishes. This makes ordinary dinners possible. Spaghetti? Grated portabella in the sauce is awesome. Steamed broccoli can be too, it depends on your palate, you'll want to fuck around a lot like a scientist. There are so many mushrooms out there, a wide variety of textures and flavors. Cauliflower steaks, mushroom burgers, almonds, cashews, legumes.

Figure out what you like and add it to the meals you are accustomed to enjoying.
There’s actually a really lazy vegetarian meal I like that leans hard on mushrooms. You pretty much steam equal parts broccoli and onions then add the same amount of mushrooms for a slight bit more steaming, then mix cream cheese through it, then that’s your base for a cottage pie (meaning you put buttery mashed potato on top and bake it). It sounds awful but it’s really good.

I don't know if vegetarian means no dairy products but I would like to suggest two dishes:

Melanzane alla parmigiana

and my go to keto side dish

You'll need:
  • 2kg cauliflowers
  • good quality full fat unsalted butter 82%
  • full fat heavy cream
  • chives
  • fresh ground black pepper
  • salt to taste
  • optional garlic and/or parmesan, or any other type of good melting cheeses (Gouda, Gruyere, etc.)
Method:

Be aware that cauliflowers will cook faster than potatoes, so test them with a fork after 8-10 mins.
  1. Boil/steam cauliflowers.
  2. Drain thoroughly, and I mean fucking thoroughly.
  3. Mash them well and add the butter. Incorporate.
  4. Add any of your optional ingredients now. Squash the garlic cloves using a press and fine shred the cheese so it will melt faster.
  5. Add the heavy cream gradually until you obtain the desired "fluffiness". Don't add too much or your mash will be watery, it depends on how "liquid" your cream is. ;)
  6. Add the fine chopped chives, ground black pepper and salt to taste.
  7. Enjoy.

I recall there's some vegetarian sushi rolls that are nice (if you're not paying real roll money for them and just make them yourself), stuff like sweet potato, avacado, onions of various stripes, bell peppers, carrots, garlic, various mixes and stuff

Most vegetarians I know are okay with cheese and eggs, so this should work for you

Huevos Rancheros:
Toast up a corn tortilla, we still want it a bit pliable but also has a little crunch. Cover the tortilla with refried black beans, then a couple of sunny side up eggs over the beans. Add a salsa of your choosing to the eggs, then top that with cheese and fresh chopped cilantro. Serve with lime and hot sauce to taste.
