Most of the time it doesn't achieve anything other than dry the meat out.

With the majority of steaks all you need to do is sear it properly, in a super hot pan, then reduce the temp and baste it for another few minutes each side, then leave it rest at room temp for 5 minutes, where the infernal temp is still rising.

Cast Iron works fine. Either on the stove in in the oven. Much prefer to just lightly shear the outside, but oven after shearing is a decent way to get a well done that isn't shoe leather. If that's your thing.
