For those making breads and other things who haven’t before and are finding bad luck, be sure to proof your yeast. It needs to be activated with some warm water (even instant yeast can benefit from this), around 120-130F although I find better luck between 130-140. And a warm kitchen so the yeast remains active and continues to feed on the sugars. If your dough seems to dry out try brushing the tops with oil before covering them to rise.

You know how red cabbage leaves have that white film on them? That's yeast. You can cultivate it in about 48 hours, and bam, you have yeast. Feed it to keep it alive, and you'll have an endless supply of yeast.

Adding a little cooked potato, maybe a tablespoon or so, to a batch of bread dough also keeps it from getting stale. More than that, and it will start to taste like potatoes. You could also mix up some Potato Buds and add that if you don't have cooked (boiled, fried, baked, mashed - it doesn't matter) potato handy.

I love the bread machine I got recently. I use it to knead the doughs. I am a true beginner, but later today I am trying homemade King's Hawaiian Rolls. I'll attach a pic later when they're done and give you all a review. Made some hoagie buns with egg and honey, they are already a favorite when we make brats.
