They're just a very tight seal. No glue or anything. You should be able to carefully pry it apart without damaging it if you can get something thin enough into the seam.

I would definitely buy more coins featuring different cows but it seems the process was very difficult and not worthwhile for all the time and effort it took. I hope you made a profit on the run at the very least. It’s amazing you were able to pull something like this off especially during the supply chain issues due to COVID bullshit.
