Don't have a Publix near me but my local grocery stores actually make pretty decent sushi. Granted it's mostly stuff anyone can make like California Rolls but they do offer stuff like Salmon rolls and such at a pretty decent price of like 5-7 bucks for a pretty large sized meal. The more 'fancy' grocery store does the same thing but with some eel rolls for like 8 bucks. Just make sure to eat it within a day of buying because it turns rock hard afterwards. Is trout sushi a thing? Because that same place sells trout that I know for a fact is super fresh and might be interesting to test out.Publix sushi is actually not that bad, at least mine had a guy who trained professionally to make it and was very stylish with his prep as well.
