So I’ve been making and consuming my own bone broth lately, and coincidentally discover beef suet.

Confused as to why anybody would want this shit, I did a little research and discovered tallow.

Tallow is similar to lard, but is specific to bovine type animals and is apparently a much healthier source of fat.

I decided to try to make my own. Unfortunately I didn’t take a picture of the suet before I chopped it up, but here’s a picture of it in the crockpot before rendering it:

Already in just chopping it up and running it through the food processor as suggested, I got a bunch of the raw material on my hands and it’s a really great skin softener/moisturizer.

It reminded me of that stuff “O’Keeffe’s Working Hands”, and sure enough tallow is the first ingredient.

Anyway, I’m about to start rendering it which could take 5-6 hours. I’ll post an update when appropriate.

It's broth but with gelatin, which is an excellent source protein.
I like to fast every once in a while, and bone broth is the way to go for that. But make your own because store bought shit is loaded with sodium.
I stopped caring about salt intake after I learned that the Japanese eat a lot more salt than even Americans, and the Japanese seem to be immortal.

Rendering tallow is one of my favorite things to do in cooking, same with bone broth. Love the way the kitchen smells when you're working on it, just nice to have in the background while you're doing other shit. Once I started doing this and cooking potatoes in the beef fat I just didn't look back. There's just no comparison to the kind of flavor you get there. In general it's fucking incredible how much you can get out of even just grocery store cuts and chickens without needing to go to a special butcher or whatever.
