The craziest actor that I've ever heard of has got to be the infamous Klaus Kinski. Leaving aside the fact that he apparently molested his youngest daughter and attempted to do so to his oldest, Nastassja, the guy would seemingly take any role offered to him (a notable exception being a villain in Raiders of the Lost Ark, which he dubbed "moronically shitty") and run with it. He was also a tyrant on set, especially if the director was Werner Herzog. At one point, it was rumored (and perhaps apocryphal) that Herzog was close to blowing Kinski's brains out due to his behavior. He even almost incited a riot during a one-man show, as seen here.
