I think she is talking about 'cauliflower rice' which is cauliflower chopped or grated into tiny bits. It is rice in the same way Almond juice is 'milk'.

She has lost almost no weight before surgery. Obesity to this degree increases risks of complications and readmission to the hospital. Losing another 50 pounds would have done helped some. Strange how cutting rice and pasta has not seemed to be the wonder cure she expected it to be. She is just replacing that with other junk.
