uses for instant mashed potato mix? -

I have a box of Idahoan plain instaspud, and while they're probably the best instant mashed potato I've had that's not saying much.
What's some other uses for this? I suspect it could work as a sauce thickener like flour? Maybe a breading augmentation like cornstarch?

I've used it as breading on its own, crumbled a beef stock cube into a bowl of instaspud with a mix of spices. It was alright, a little dry. I would recommend soaking and breading the chicken twice.

If you like bread baking, instant mash is always good to put in your yeast bread. You don't use much, a couple Tbsp per loaf, but it makes for a nice soft sandwich bread that stays soft for a few days.
