Lunch was chicken tortilla flavored cup o' noodles with a poached egg on top. Dinner was maki rolls and nigiri, half were salmon and the other half tuna. Then I had a matcha donut. Now I'm very full and happy.
Skirt steak marinated in soy sauce (yes I know hear me out), cumin, red wine vinegar, lime juice, and garlic.
Seared in a pan on blazing hot, peppers and onions sautéed in oil with a bit of the marinade.
Pan fry your flour tortilla, add your fajita mix. I typically also include sharp cheddar and black beans.
