I'm trying to eat a bit healthier, cut down on fast food, you know the story. But I'm having a bit of a hard time coming up with lunches that are easy to make, especially something I could just do in the morning. It usually ends up being a sandwich and chips/pretzels/whatever, or shitty canned soup in a thermos. There's gotta be a better way, but I'm not a great cook.

Assuming access to a fridge and microwave, any thoughts?

I only have homemade rice when I'm at work. Its filling and very versatile. Sometimes I have it fried with eggs and a meat or sometimes plain. It keeps me energized and stops mr from want to much on something the rest of the night.

I do have a high tolerance for eating the same thing everyday though.

Rice topped with cut up chunks of baked chicken or turkey, pepper and onion. If you use garlic, make sure to add tumeric so you don't smell. I add powdered cayenne and paprika too.

If you have access to a fridge or your bag can be left in a cold and drafty area like a docking zone, yogurt is a good bet. I like plain yogurt, which I eat with apples or other fruit.

I've never done soup, since my Thermos is used for coffee. Since you have access to a microwave, you could make and bring some soup. Beef is tasty, but if you're trying to be more healthy, maybe go for turkey or chicken or just vegetables. Egg based noodles are good too.

And of course, sandwiches. They're as healthy as the stuff you fill them with, and the kind of bread you use. Donno how healthy potato bread is, but it tastes delicious and stays moist and fresh for long periods of time.

Cut out any and all sources of high fructose corn syrup. Avoid artificial sweeteners, too - they fuck with your body because your brain thinks you're getting actual sugar and releases insulin to compensate. Just between those two changes you can make some significant progress in two or three weeks.

I often just bring whatever leftovers are easiest to throw into my backpack, but I've also been wanting to cut down on carbs- last week I packed sliced turkey, some cheese, a cut apple, and a granola bar. Hard cooked eggs are great for lunches too, I've packed them with a salad before (ditto the turkey slices and apple). I've just gotten sick of sandwiches after so many years of eating them and the bread gets to be too much extra carbs. If you're not avoiding carbs then you could make a big batch of pasta salad with tomatoes, basil, mozzarella, at the beginnings of the week and spread it out over your work days.
