Panini. I buy ciabatta rolls from Costco. Put whatever condiments, cheese, meat I want or have, then grill it. I've eaten this almost every day for two weeks now for lunch.
I've mostly made it with pesto, provolone, tomato, arugula, sauerkraut, sliced chicken or turkey.

Aged salami, smoked Gouda and mustard sandwich. Nuke it for 30 seconds to a minute and it's surprisingly nice. Creamy, spicy and probably not so great for you in the frequency at which I eat these. They're just too easy and tasty.

Anything with rice as the main ingredient. Also like to make chicken sandwiches with plenty of mustard. The good kind, not the hot dog kind. Ramen is another one. Like to use my hoard of spices instead of the nasty seasoning packet.

I typically eat grilled kale, brocholi, and carrots twice a day. I won't stop eating morally right food.

If I'm not tired, just out of inspiration for cooking:

Shakshuka (eggs poached in a tomato sauce)
Fried rice
Spaghetti in a meat sauce

If I'm tired and hungry and don't have the energy for a lot of cooking/cleaning/prep:

Poached or fried egg on toast
Leftover rice, vegetables (leftover or frozen), an egg, and chili sauce.
Peanut butter on wholegrain toast
A sandwich or a wrap using deli meat (turkey breast usually), spinach and cheese.

If your bread is sturdy enough, adding thinly sliced tomato to your grilled cheese is good stuff, by the way.

Egg drop ramen with scallions, carrots and generally whatever ham or pork is leftover in the fridge. Get instant noodles and throw the flavor packet out, make my own broth out of condensed veggie stock, soy sauce and mirin.

Also, ham sandwiches, mostly ham and cucumber with brown mustard or Cubans with swiss, yellow mustard and pickle.

Used to use an old family tuna salad recipe all the time. My family adores it. My wife (and basically everyone who isn't blood related) hate it for being about 35% onions, by composition. It has been described as "if a dockworker fucked a neckbeard" and "the Innsmouth sandwich". Have cut back on it by request of the wife.
