Duck. I went in for a third share of a local farmer's flock and got some wonderful duck eggs, then at slaughter time I ended up with five whole ducks and a bunch of packages of breasts, legs, offal and bones for my freezer. The problem is that I just fucking love duck and now that I have a freezer full of it I can't stop eating it. The whole haul will gone by January at this rate. Quack quack.

Isn't it wonderful? I can hardly believe it's poultry when I compare it to like turkey or chicken. It's so flavorful and greasy and it goes well in so many dishes.

Agree 100%. And it's spoiled me for red meat too, I'd rather have a lovely seared duck breast than a beef filet any day.

Some variant of chicken mixed in with rice. Mostly baked chicken, mostly long grain. I always have enough left over for work the next day, so I guess pragmatism factors in just as much as my enjoyment of the taste.

Salisbury steak. It's fucking easy as shit. Just make some sort of gravy and throw a few frozen burger patties in it and let it simmer for half an hour with minimal intervention outside of the occasional stir or patty shift. Put it over noodles, rice, mashed potatoes, whatever. It's cheap, good, and simple.

Also stir fry is another I make as a sort of "whatever" meal because you can throw practically anything in it. Whatever bag of frozen veggies you've got, and some sort of meat. Beef and broccoli, spicy garlic pork, sesame chicken, there's no end to what you can to with stir fry.

I usually add some softened onions or leeks as well as the kale and more butter then a reasonable person would think necessary.

Also, (now that I am at PC), I agree on the onions and leeks. Sometimes I just alter the recipe and use Savoy cabbage, and even some sauteed peppers if I want a bit of crunch in it. Sometimes seasoning the potatoes with cayenne, chili powder and garlic powder will also be a thing depending on what the mood strikes appropriate.

And yea, Sometimes I think Cal Ceannan is a bit of an excuse to eat a lot of butter, lmao.

If I'm lazy and need dinner (and leftovers): spaghetti with whatever veg, sausage, and jarred sauce.

Lazy but no leftovers: frittata (or strata) with whatever meat, veg, and cheese I have.

Not as lazy, but haven't gone grocery shopping: soup or stew with dumplings, pot roast, or a noodle stir fry.
