Probably Wolfenstein 3D, which as already mentioned was retroactive. Played Mortal Kombat before the ESRB had solidified the rating system. Also Doom.

Also No More Heroes. At the time, my perception was that most M rated games were grimy and realistic and I wasn't into that aesthetic, but NMH had a style that stood out to me.

Either GTA: Vice City or GTA: San Andreas.

I'm going to lean towards VC because that's the older of the two, and it still remains my favorite in the series.

GTA Chinatown Wars for the DS. My family was very much against violent videogames/me playing anything above my age rating when I was a kid (I didn't even get any kind of game system until one fateful birthday when I was given a GBA SP, which I still have to this day). I remember being allowed to pick a few games for my parents to buy sometimes, and I saw the cover and thought it looked cool (I had zero knowledge of what GTA was, as all I had seen of it were the boxes on display for consoles I didn't have) so I snuck it in behind some much more kid-friendly game. It may have been simple pixels and top down action, but that first experience of 'adult' gaming was great, there was actual challenge to it and I had fun.
