I've tried playing as non-warrior builds but for some reason I can never stick with them. That said, in Oblivion I would generally tag Destruction but never got too far because I sucked at custom classes.
In Skyrim I tried the same but daaaaaaaaaaaaaang destruction levels slowly. Conjuration is easy as piss to level though, so I had some fun with that.

Ancient Shrouded Armour Gloves + Assassin's Blade perk = set for life.
In Oblivion I made a heavy armour hand-to-hand Khajiit. Which I would've done in Skyrim if there was a fucking hand-to-hand skill tree.
Fuck you Bethesda, bring back goddamn punching skill trees. Fists of Steel doesn't cut it.

typically though i like bows and shadows n shit, magic is fun to do stuff with, melee in general can be done but maces and one hand plus shield are out of the question, not that i can't do it that way i just don't care

I have a character called Punch Master Jimmy in all my ES games. He punches everything he comes across and drinks all the booze he comes across.
EDIT: oh, and he's a racist.

A dirty wandering monk. He fought hand to hand but wore a shirt and wasn't perpetually drunk.
I used to be an archery fan but I gave that up and have become more of a heavy armor sword and board type. Oh and my main character in Skyrim before I stopped playing was an orc samurai.

In Oblivion I had a custom class that pretty much boiled down to blunt and stealth. Might seem like a mismatch, but to me, there were few things more enjoyable than sneaking up behind some Dremora and braining the fuck out of them with a mace.

And I also used to collect Daedra hearts and store them in the cupboards of my houses because I have problems.

Spellsword and nightblade. Sorcerer was fun for a while, but once destruction and alteration are fully buffed, nothing is really a challenge anymore.

I pretty much play as a warrior who specializes in sneaking and restoration (Within one character for Oblivion, I actually tried to beat some enemies down with only fist). Oblivion made it easy to sneak if you take fives pieces of clothing and enchant it with chameleon for 20 points a piece(My other Oblivion character can pretty much sneak by unseen with a enchanted blade and sneak-attack for 6x the damage). Skyrim however, I'd have to rely on sneaking without cheesing it in magical stealth camouflage. I did invest in conjuration but then removed the perks for it to build up perks for other skills. Did attempt to play as a Khajiit monk in Daggerfall after watching some vids on YouTube a few years back (said vids had a guy playing as a monk, using no armor save for some sandals and using only staffs, nothing else as weapons) but I lost some interest in Daggerfall.

I always play as a warrior, usually a Breton or a Nord. I always go for brute strength and favor a warhammer.

If a problem can't be fixed by hitting it with a hammer, it's not worth solving.
