From 1-5
1-Elder Scrolls (Modding is what makes it special but that doesn't mean the pre-Morrowind games are any less special)
2-Fallout (2 is the better than the rest)
3-Gothic (Dabes German RPG series)
4-Doom (So fun to kill demons with a shotgun.)
5-Souls series (Demon's Souls, Dark Souls and Dark Souls II)

I give an honorable mention to Shadow Warrior along with Armored Core. The former for better a fun romp in an old school DOS game (Love to get my hands on it's reboot) and the latter having good music along with blowing stuff up as a mercenary in a giant robot. Soul Calibur gets another though that is from 3 to 5 since you can make your own fighter and fight against the official roster.

1 - Fallout
2 - Bioware's D&D Games (if that's cheating then just Planescape: Torment. It gets to be an entire series.)
3 - Galactic Civilization
4 - Ungalactic Civilization (sometimes just called Civilization by the unlearned)
5 - Elder Scrolls

Pokemon was just shy of making the list, and RPG Maker would have if I felt it counted as a game. Darkstalkers might have made it if they'd make a new game already. Important note: I originally wrote "Nightstalkers" instead of Darkstalkers, but Nightstalkers is a comic about Blade, his buddy who is a vampire and played I think by Ryan Reynolds in the movie (haven't seen it), and a third guy who I forget what his deal was. They'd go around terrorizing old ladies in order to protect us all from the night.

Xeno series( Xenogears, Xenosaga, and Xenoblade): From the themes and the great settings, these games changed my life. Seriously, go try those games out.

Shin Megami Tensei series:
What can I say, deciding to shape the world by your choices and demons is awesome.

Pokemon:
I can't get away from it, it's too addicting.

Super Smash Bros:
Facing a majority of Nintendo characters is downright awesome.

.hack:
I really like playing in a MMO that actually a offine version. I enjoyed the stories quite a lot with awesome music as a plus. If you find a good deal on any of them, go check them out.

Europa Universalis - I'm a huge history buff and love the modding. Not gonna lie, I tend to play a Steppe Horde, China (both Qing and Ming and Yuan in one mod for EU3), Dai Viet, or somewhere in Eastern Europe. My obligatory first games are always as Portugal and Brittany, respectively.

Elder Scrolls - Started with Morrowind, put a ton of hours into every game since then and became addicted to the lore of the game.

Mega Man - First game series I really got into, haven't played anything new since Zero series ended though.

Fallout - Been a fan since 2, see what I said about Elder Scrolls.

Victoria - See Europa. Generally I play an Unciv like Japan, Persia, Qing or Dai Nam. Had a few fun games as Serbia, France, Russia, and Mexico though. Hard to finish a campaign for me though. I prefer VIP to Vanilla.

Honorable mentions: Crusader Kings (only for 2, never played the original so I didn't include it), Bioshock, Final Fantasy, Battlefield, and FIFA.

If it counts, the Team ICO games, considering that Shadow of the Colossus is technically a prequel to ICO.

Final Fantasy: Well mainly IX. I did enjoy VII, X, IV DS, and for the most part XIII, but IX is the one I consider to be my most absolute favorite FF and JRPG in general.

Fallout- Love the amount of character customization, the stories, the lore, the characters, the post apocalyptic setting, ect. Fallout 1,2, and New Vegas are among some of my favorite games.

Sly series: (Except for Thieves in Time. I hated that game) I've always had a soft spot for these games. 2 in particular is just fantastic IMO.

SMT series: Just a fun series of games that have unique RPG mechanics and loads of different demons/personas to fuse.

5) Terraria

Terraria has evolved beyond being just another Minecraft clone - in fact I'm going to say that vanilla Terraria has surpassed Minecraft in every way possible. There's just so much to do, so many weapons to find, awesome bosses and holy hell the soundtrack is amazing. It's definitely worth the £5 I paid to get it!

4) Pokemon (Gens 1-5)

This is more on the list because I grew up with these games more than anything else. I don't like the newer games - but maybe that's simply because I'm not the right audience for the games any more, which is completely understandable. But the older games will always have a place in my heart (especially Platinum and 5th gen).

3) Black & White

This is another series that's here because of nostalgia. I also happen to be a mythology nerd so this game is everything I could want. I know a lot of people don't like the first game because of how buggy it is, but to be quite honest I never had a problem with any of the glitches except for the wolf creature quest.

2) Clock Tower

The first Clock Tower game was the first horror game I ever played to completion and it remains one of my favourites. The second one's pretty good too despite being just as cheesy as Resident Evil 1. The only game I don't like in some way is The Struggle Within/Ghost Head where everything I like about the CT games was done wrong (and the scene where Alyssa hits a zombie with a broom and it just falls on the ground and flattens out of existence makes me laugh my ass off every time I see it).

1) Earthbound/Mother

Earthbound! God I love Earthbound! Dear Shigesato Itoi I'm SO ALONE - *ahem* So in case you couldn't tell from that dead meme I used just now I really love the Earthbound trilogy despite how overrated the games have become in recent years. Mother 3's my favourite mostly for the story and the characters (that and the final battle just tore me to pieces), Earthbound has great music and a fun setting and Mother 1 has retro graphics that are absolutely charming. If you want to play something a little different and you're willing to ignore the hype the cancerous fandom builds around these games being "the best gaymes evur!!!", then I'd really recommend them!

Mass effect - before 3 was booted out of the dev lab with a half arsed ending, it was a cracking series. We won't talk about andromeda.

Soul reaver - Amy Hennig is a spectacularly underrated writer, IMO. This series was fantastic (aside from blood omen 2, that is. Blood omen 1 was acceptable for what it was).

Deus Ex - even invisible war wasn't too bad (when it wasn't crashing), despite it bei g the teen drama recut of the original. Nothing will beat that first game, just because it was so superbly written. I like Human Revolution and Mankind Divided, too - Adam Jensen's gravelly "I never asked for this" is just too satisfyingly noir/cyberpunk to ignore.

Dragon Age - origins was fantastic, 2 was an hilarious mess, and inquisition had some redeeming moments, although the hinterlands can get fucked.

Destiny - I really enjoy the depth of lore attached to the game, even if bungie did try to forcibly lobotomise it just before release. There's a lot of good writing in the grimoire of D1, it's just a shame that large chunks of it are directly contradicted in D2.

Special mention: Fallout. I couldn't get into 1 or 2, largely because I played them after I'd already beaten 3, so the experience was a bit skewed by that. Still, fun franchise, entertaining touches in there, and by latterly being a Bethesda franchise, the bugs are always hilarious.
